I am officially starting “What I eat Wednesday” so I will be uploading a what I eat in a day on WW EVERY Wednesday!!!! Yay!!!

Chicken & Wild Rice Casserole:

3-4 chicken breasts diced and cooked
1 can low fat cream of chicken soup
1/2 cup diced onion
1/2 cup light mayo
1 can French style green beans, drained
1 can water chestnuts, drained and diced
1 small jar pimentos
1 box wild rice (I like Rice a Roni or Uncle Bens)
1 can chicken broth
1 can French fried onions

Cook rice in chicken broth as directed on box. Stir the remaining ingredients into a large bowl. Add rice. Put into sprayed 9×13 pan and cover with fried onions. Cover with foil and bake at 350 for 1 hour. Remove foil halfway through so the topping can brown.

8 servings= 6sp (with 2 tbs French fried onions) or 8 sp with full amount.
